Hawaiian Garlic Shrimp

When my husband and I got married, we enjoyed a 2-week vacation on two separate islands in Hawaii as our Honeymoon.  One of those islands was Oahu.  We were told by locals that the Giovanni shrimp truck on the North Shore was definitely something not to miss.  They were so right!  We trekked out there twice while we were on that island, just to enjoy the Garlic Shrimp they serve. 


Several years back I went on a pursuit to recreate that famous shrimp dish.  I have come pretty close to the taste we remember, simplifying it for a busy home cook.  Giovanni's served a large helping of their Garlic Shrimp with sides of white rice drizzled with the garlic sauce and a slice of fresh lemon for seasoning the shrimp and rice.  So incredible!

Hawaiian Garlic Shrimp

1 lb cooked Jumbo shrimp, defrosted & tails removed
1 tbsp flour
1 tsp smoked paprika
1/2 tsp cayenne
1 tsp salt
2 tbsp butter
4 tbsp minced garlic
1 fresh lemon, sliced into wedges

In a large food storage bag, add flour and spices.  Shake mixture together to combine.  Add shrimp to bag, seal.  Toss shrimp in flour mixture until very well coated.  Place shrimp into a foil lined 9x13 baking dish, arranging in a single layer. Spoon garlic on top of shrimp.  Place pats of butter in dish.  Bake at 350 for 15 minutes, until heated through and garlic is golden. Serve shrimp with white rice and a slice of fresh lemon.


We start off with frozen already cooked shrimp that have been deveined and tails removed. Then just mix up the seasoning in a large food storage bag and coat the shrimp.  



Top the shrimp with LOTS of minced garlic and some butter.  You can pre-melt the butter and pour it over or you can just put pats on top and they will melt in the oven.


When it is done baking, it comes out looking something like this with a thickened buttery garlic sauce.  Give it a good stir and it's ready to serve.



This is such an easy and fast recipe for any day of the week.  The shrimp take only a short bit to bake and while that is going you can get the rice cooking and any sides prepared.  Trust me when I say, this is so amazingly good!

Because of this, grocery stores are completely sold out of many staple items in our area and have been for many weeks now.  We have been eating from our food storage, but I am working at restocking things as they become available again.

April 2020 Monthly Menu Plan



I always meal plan for the entire month using the bulk of ingredients we already have on-hand. But, this month is unprecedented.  The world is currently in the midst of the Coronavirus pandemic. Because of this, grocery stores are completely sold out of many staple items.  We have been eating from our food storage, and will continue to do so in the month of April. Eventually the stores will be able to keep stock on hand, but in the meantime, we are just trying our best to make due with what we have and can easily access.

Chile Relleno Casserole

I was born and raised in Southern California.  Now, personally, California is one of the top notch spots in the US to come across authentic and delicious Mexican food.  Being so close to Mexico, we have many Latino's residing there and they make some dang good eats!

Growing up, my family used to make homemade Chile Relleno's.  They were made completely from scratch using poblano chiles.  It was a very involved process, or at least more involved than I am willing to do myself.  There was several different steps from roasting the whole poblanos, to peeling the skins, to stuffing them, then dipping them into the egg batter and frying to a golden brown.  They were work, but man they were delicious!

Now days, I make a simple casserole that gives the same flavor profile with a lot less work. Enter Chile Relleno Casserole.


One of the best things about this casserole is that it takes simple ingredients that most people stock in their pantry.  Making this an easy and quick meal to whip up any day.

Chile Relleno Casserole

6 corn tortillas, chopped
1 can diced green chiles, well drained
1 cup evaporated milk
1/2 can tomato sauce
3 eggs, beaten
1 cup shredded cheddar cheese
1 tsp salt
1/4 tsp black pepper
1/2 lb browned ground beef, optional

Grease an 8x8 baking dish with cooking spray.  Layer half of the chopped tortillas in bottom of dish.  Sprinkle half of the green chiles and half of the cheese over tortillas.  Top with remaining chopped tortillas. Finish with remaining green chiles. If using browned ground beef, sprinkle in with layers of tortillas and green chiles.

In a measuring cup, beat together eggs, evaporated milk, salt and pepper.  Pour egg mixture over casserole.  Bake uncovered at 350 for 30 minutes.  Pour tomato sauce over top and remaining cheese and return to oven to 10 minutes.


Essentially, you just layer the ingredients twice and finish with a topping of cheese and tomato sauce that bakes up to deliciousness.  Sometimes if I want to bulk up this recipe at bit more, I add a 1/2 lb of browned ground beef by sprinkling it in with the layers of tortillas and green chiles.  It tastes wonderful that way too.


This dish isn't spicy at all, the green chiles are very mild and give the casserole a nice flavor.  You can also sub out the can of green chiles for fresh, chopped poblano peppers to make it a little more authentic to a stuffed chile relleno, just be aware that poblano's have more spice to them than mild green chiles do.
